Lamb’s Tripe recipe سیرابی و شیردان


  • One Lamb’s Tripe,
  • One cup chickpeas,
  • One Onion,
  • One bulb of Garlic,
  • One paprika (optional),
  • One tablespoon Citric Acid (جوهر لیمو),
  • Salt, pepper and Saffron.

Soak tripe in water

add one full tablespoon Citric Acid,

Stir well and leave around 10-15 minutes or until the inner skin can be peeled off easily,

Cut tripe into bite sizes

Put into the pan with diced onions, cloves of garlic, salt, pepper and a pinch of Saffron,

pour 3 cups of water

Cover and Simmer over low heat for about 2 hours and half

Soak the chickpeas overnight or for 12 hours

add into the pan

continue simmering for another 30 minutes, or until the chickpeas are done

add the chopped one Paprika, Simmer for another 10 minutes

You may saute chopped garlic

Sprinkle with fried garlic

 This delicious soup is perfect accompanied with Fresh Lemon juice!
