Persian Barberry Rice with Chicken زرشک پلو و مرغ به روش اکبر جوجه

This recipe comes from the north of Iran, the taste is fantastic!

Ingredients:

6-8 skinless chicken thigh fillets

One medium Onion

Half a cup of lemon juice

A pinch of Saffron

Half a cup of (sour-sweet) Pomegranate paste

Olive oil

3-4 tablespoons dried barberry

1-2 tablespoons sugar

3-4 cups rice

salt and pepper

put chicken thigh fillets into a bowl

add the chopped one medium onion

add half a cup of lemon juice, salt and pepper

sprinkle a pinch of saffron

mix very well all the ingredients

cover the bowl,  put it in the fridge for 5-6 hours (or overnight)

you need to add oil up to at least half the depth of your frying pan (olive oil is the best choice)

place the fillets in the pan over medium heat

At the begging the water inside chicken comes out during frying, the water is absorbed gradually, you can see step by step by following the pictures

you may turn the fillets over

continue frying until golden brown on both sides

put them on kitchen towel

place the fillets onto suitable plate

pour pomegranate paste over the fried fillets (about half a cup)

pour hot water over Saffron, it helps release the aroma and color

put 3-4 tablespoons barberry into a sauce pan, add 2 tablespoons sugar, a little bit saffron, and  oil

simmer for 3-4 minutes, until most of the water is absorbed

cook rice in the rice-cooker,

(3 cups long grain rice, 4 cups of water, oil, salt and some saffron)

gently mix the cooked rice by fork

add some rice into the saffron, gently mix together

place the rice on plate topped with golden Saffron rice and barberries

  1. Help! A couple of questions….do you normally warm the pomegranate paste? And is pomegranate paste the same as pomegranate molasses??? Also, I understand how to mix the saffron and water, but how much water roughly do you use and then how much do I pour on the barberries??! Not all of it I guess because I need some for a little bit of the rice…….
    I want to impress Rana….it will be our 3rd date….I’m a Canadian and this is all veeeery new cuisine for me!

    • No need to warm pomegranate paste, which is better than molasses, two or three tablespoon water is enough for the saffron you may reach the yellow color of saffron by a cube of ice! For berries also two or three tablespoon of water would be fine, I am sure that Rana would be impressed because you put love in your food, wishing you success and happiness!
