Stuffed Bell Peppers (Dolmeh Felfel) دلمه فلفل

Ingredients:

  • 6-7 Bell peppers
  • One cup Rice
  • One cup split pea
  • 300 gr minced ground meat
  • 3 tablespoons dried Tarragon (or one bunch of fresh Tarragon) (or you may add other kinds of aromatic green leaves herbs such as parsley, coriander…)
  • One Onion
  • One bulb of garlic
  • 2 tablespoons Tomato paste
  • Salt, Pepper, Turmeric and cooking oil

finely dice an onion, stir-fry until golden, add one teaspoon Turmeric,

then add ground beef

split peas need to be soaked overnight,  In separate pot, cook split peas until done,

add uncooked rice and the cooked peas to meat,

You may add some lemon juice  if you like,

add 3 tablespoons dried Tarragon,

add salt and pepper, combine well,

OR one bunch of fresh Tarragon (chopped)

 cut the top part of each pepper, remove the seeds,

Stuff each pepper by the mixture,

put the top part back on each pepper,

add some oil into the pan,

finely dice the cloves of garlic, add into the pan,

fry until gold in color,

add 2 tablespoons tomato paste, stir-fry very well,

then pour 3 cups of water, add some Salt and pepper,

put the bell peppers one by one into the pan,

Cover and cook for about an hour on medium to low heat until the peppers are well cooked.
