Quince and Split peas stew Shiraz Style قورمه به شیراز

Ingredients:

  • 500 gr Beef (or lamb or chicken),
  • One Cup Split peas,
  • One Quince,
  • One Onion,
  • 2 tablespoons sugar (optional)
  • One Lemon (juice),
  • Salt, Pepper, Turmeric and Saffron.

Soak Split Peas 3,4 hours before, change the water,

 cut the meat into 3×3 cm cubes, Dice the onion, Put them all into a pan,

pour One cup of water, add one teaspoon Turmeric,

Cover the pan, and put it over medium low heat,

Simmer until almost done the meat,

Cut the quince up into cubes and add to the pan,

Transfer the drained split peas into the pan,

Cover the pan, let them all simmer together for another 10-15 min over medium-low heat,

add two tablespoons sugar,

squeeze one lemon juice over,

add Salt, Pepper and Saffron,

Cover the pan and Simmer again for 10 minutes!
