Samanoo سمنو

Samanoo is a sweet paste made from germinated wheat, which is prepared for Nowruz,Traditionally, women take a special party for it during the night, and cook it from late in the evening till the daylight, singing related songs, such as: ”  Samanoo is boiling and we are stirring it, others are asleep and we are playing Daf”

It originally comes from the Great Persian Empire and A plate or bowl of Samanoo is a traditional component of the Haft Sin table.

This recipe takes 4-5 hours to be done,

Note:

1.Do not toast the flour, otherwise you won’t have the original beautiful texture of Samanoo! آرد را به هیچ عنوان بو ندهید

2. The sprouts must grow to about 1-1.5 cm and become green, the green part of spouts make the Samanoo more sweet and dark brown in color! ( It lasts 6-7 days from the first day you soak the seeds in water) گندم باید 1-1.5 سانتیمتر سبز شده باشد در غیر اینصورت رنگ سمنو قهوه ای خوشرنگ نخواهد شد

Ingredients:

  • One Cup Unpelted wheat (Gandom)
  • 3-4 Cups wheat flour
  • some walnuts and/or almonds
  •  About One Liter Water

Clean and wash the unpelted wheat then soak the seeds in water for about 2 days or until they start sprouting under water, change the water everyday,

Transfer them on a spread-out cotton cloth (towel or paper towel). You should cover it both on top and bottom. make sure the cloth covering is moist and humid at all times,

sprinkle with water 3,4 times a day,

You will notice that the sprouts begin to grow. Continue to sprinkle with water every day,

choose a suitable platter,

Transfer the sprouted wheat in it,

put another towel on it and sprinkle with water again,

make sure the cloth covering is moist and humid at all times,

Continue to sprinkle with water every day,

Once the sprouts grow to about 1 cm and become green,

By growing sprouts into 1-1.5 cm,

 It lasts 6-7 days from the first day you soak the seeds in water,

(the green part of spouts make the Samanoo more sweet and dark brown in color),

blend the sprouts all thoroughly by adding one cup of water,

place the mixture into a clean cotton cloth, and squeeze well, until the white water inside comes out,

pour it into a suitable pot,

Do it again and again for 5 or 6 times!

blend them again by pouring one cup of water, put into the cotton cloth and squeeze,

this is the final liquid! (about one liter)

Sift the flour into the pot,

combine very well, turn on the heat,

(from now on it takes sometime about 4 hours until the end of the process),

Stir very well every 5 minutes over very low heat,

You will see the color is changing slowly into darker brown,

cover and again stir every 5 minutes over very low heat,

finally you have a thick mixture, stir continuously over low heat for more 5-10 minutes,

it is time to pour one cup cold water,

stir again, add some walnuts and almonds,

mix very well,

cover the pot,

Preheat the oven to 150 degrees Celsius,

put the pot into the oven for about 15-20 minutes,

(or you can put it on stove over very low heat)

and finally…it is done!

  3. Thanks for the detailed recipe with pictures and special thanks for showing how much to sprout the wheat for the right sweetness. Whenever I sprout the wheat, it sprouts well but I see white mould/fungus in it after first 3-4 days. I wash the wheat a few times a day with fresh water even then I see the fungus in the morning (because no washing was done overnight for 7-8 hours). Do you have any way of preventing this white fungus? Or is this fungus always going to be there and is harmless?

    • دوست عزیز تا حالا به این مورد برخورد نکردم که بعد از 3 یا 4 روز کپک و قارچ ایجاد بشه
      خوب شاید بشه توی یخچال گذاشت فقط ممکنه دیرتر جوانه ها رشد کنند
      نمیدونم چه طور میتونم کمکتون کنم
