Havari or Shrimp Coriander Rice Bandar-Abbas style حواری میگو بندرعباس

This meal traditionally should be a bit hot and Spicy!

Ingredients:

  • 500 gr Shrimps
  • one bunch of Coriander
  • one Onion
  • one bulb Garlic
  • 2 tablespoons tomato paste
  • salt, Pepper, Red pepper, Turmeric and saffron
  • 3-3.5 cups of long grain Rice
  • 2 tablespoons dry Fenugreek leaves or one bunch fresh one (optional)
  • Cumin, Curry powder (optional)
  • one cup tamarind pulp, dissolved in warm water (optional)

Dice and Saute an Onion,

chop and dice garlic cloves, add into the frying pan, add one teaspoon turmeric powder,

add the Shrimps,

add 2 tablespoons tomato paste,

Dissolve saffron in a cup of hot water, pour into the pan,

add salt, Pepper, Red pepper (Cumin, Curry powder)

(at this time you can pour one cup tamarind pulp dissolved in warm water which is optional)

Reduce the heat to low, Simmer until the most of water absorbed,

then add the chopped coriander, and 2 tablespoons dry Fenugreek leaves,

mix well then turn off the heat,

add 3-3.5 cups of rice, 2 cups of water, more saffron if needed, vegetable oil, salt,

put the lid on, turning on the electric rice cooker (or any kind of pot),

During the half time of the Rice cooking process (after 10 mins), until the water is mostly absorbed,

add all ingredients and mix with half-cooked rice,

avoid reaching the ingredients in the bottom of the pot,

dig some deep holes in the rice mixture with a handle of a (wooden) spoon to make sure the water will evaporate !

put the lid on, and let the cooking proccess continue on low heat,

 rice cooking time totally : around 45-60 mins
