Shami Kebab Rasht Style شامی نخود به روش گیلانی

The Taste is very fantastic!

Ingredients:

  • 400 gr Meat (lamb, beef or chicken)
  • 200 gr Chickpea
  • 2 medium Eggs
  • One medium Onion
  • Salt, Pepper, Turmeric and Saffron
  • some oil

Soak the chickpeas overnight in water, then drain,

put the meat, the chopped onion and the chickpeas in a pan, add one or 2 cups of water, (less or more, depends on the meat)

add one teaspoon turmeric, cover the pan, simmer until well done, and also until NO  water remains in the pan!

time to add the eggs and blend well,

add Salt and Pepper,

add a pinch of Saffron ( the aroma and taste of Saffron is very important in this recipe!)

mix very well,

let the mixture rest for one hour!

In small amount form the meat mixture into a circle shape, make a small hole by finger in the middle of the circle!

Heat the oil in a frying pan over medium-low heat, place them into the frying pan,

 Fry slowly until well done and light browned on both sides.,

then place them on paper towel in order to observe the oil.

      زمانی که ایران بودم از یه خانم بسیار مهربون گیلانی یاد گرفتم
