Pomegranate Meatballs کوفته انار

This is my created recipe!

Ingredients for 22 meatballs:

  • 500 gr ground beef
  • One medium Onion
  • One medium Egg (you can add one or two tablespoons bread crumbs, flour or chickpea flour instead of Egg)
  • One bunch of Parsley (or any other types of aromatic herbs, Fresh or dry)
  • One sour sweet Pomegranate
  • Salt, Pepper, Turmeric and Saffron

For the Sauce:

  • One cup Pomegranate paste (200 ml)
  • One tablespoon Tomato paste

Grate or Blend one onion,

finely chop the parsley,

place the ground meat, the chopped parsley, the grated onion, one egg, Salt, pepper and turmeric into a bowl,

mix very well,

Roll the meat mixture into balls about the size of a small walnut, put them all into a frying pan, no need oil,

Saute the meatballs over medium heat,

Heat 1 tablespoon oil in a pan, add one tablespoon tomato paste,

saute for 3 minutes,

then add one cup Pomegranate paste,

Dissolve saffron in a cup of hot water and pour into the pan, add a bit salt and pepper,

Heat the pan until the mixture just boils,

Place the meatballs into the sauce,

Cover the pan and let them slowly simmer in the sauce for 30-45 minutes,

Add the pomegranate seeds, turn off the heat after 3 minutes,

(put some pomegranate seeds aside for decoration)
