Almond Yeast Cupcake کاپ کیک بادام

My version recipe for Almond Yeast Cupcake by using Yeast,

Ingredients for 12 cupcakes:

  • 150 gr of All Purpose Flour ( 1 1/2 cups)
  • 50 Almond Powder (1/2 cup)
  • 100 gr unsalted Butter
  • 150 gr Yogurt (3/4 cup)
  • 150 gr Sugar (3/4 cup)
  • 3 medium eggs
  • 1 teaspoon Instant Yeast (or baking powder)
  • 2 teaspoon Almond extract 
  • 1/4 teaspoon salt

It would be better if you scale the ingredients, otherwise for my recipes use rice-measuring cup,

Cream the butter and sugar until light and fluffy,

Mix very well,

add one teaspoon Instant yeast (or baking powder),

add 2 teaspoons Almond extract,

add 1/4 teaspoon salt,

add the Yogurt,

add 50 gr (1/2 cup) Almond powder,

Sift the flour over the top of the batter and stir,

Stir batter until thoroughly mixed,

Cover bowl with plastic wrap and allow it to rest for 2 Hours in a warm place,

put the cupcake liners in a cupcake pan,

pour one scoop batter into each cupcake liner,

let the batter in each cupcake rest for another 10 min,

In the meantime Preheat the oven to 350 degrees F or 175 degrees C,

Bake for 20-22 min, until the tester comes out clean,

the texture of this cake is so soft, moist and light!
