Naan Fasaei – Persian Cookies کلوچه فسایی، نان فسایی

Ingredients:

  • 200 gr wheat flour
  • 100 gr chickpeas flour (optional)
  • 100 gr powdered sugar (icing sugar)
  • 150 gr butter ghee ( Don’t use unsalted cow milk butter for this recipe),if you are living in America use Shortening (Crisco), if you are living in Iran use Roghan nabati Asil (روغن نباتی اصیل), if you are living in Europe you can use vegetable oil or margarine which is suitable for baking (it would be mentioned on the label of the product).
  • A pinch of saffron (Dissolve the saffron in hot water)
  • Purslane seeds, Poppy seeds or sesame seeds

It would be better if you scale the ingredients:

Stir Butter ghee and powdered sugar until well mixed,

Sift all the flours over the mixture,

Mix very well,

Time to wash your hands and knead the dough very well for 2,3 minutes until the ingredients very well combined,

Wrap dough in plastic wrap, let it rest for at least 12 hours (up to 24 or even 48 hours)

after the rest, knead again,

spread dough little by little, 5 mm thick,

and cut shapes (Traditionally the shape is round in glass size)

or small, cute shapes which is suitable for Persian new year,

A spatula can be used in order to remove the small shapes,

carefully place onto the baking sheet on a oven tray,

Dissolve the saffron in hot water,

Brush Saffron over each one,

Sprinkle with Purslane seeds, Poppy seeds or Sesame seeds (white or black),

Purslane seeds is used traditionally,

Preheat the oven to 325 degrees F = 160 degrees C or Gas mark 3

Bake the cookies for 15 minutes,
