Garlic Rice and Lentils Shiraz Style دمپخت سیر شیرازی

Ingredients:

  • 3 cups long grain rice
  • 1 cup lentils
  • 2 bulbs Garlic
  • 1 large onion
  • 4,5 medium carrot
  • 2-3 bunches Aromatic Herbs, such as: Coriander, parsley,…Basil, Tarragon, Dill
  • Salt, pepper, turmeric and saffron

Dice one large onion, place them into a frying pan, saute for 5 minutes, then add the diced garlic (2 bulbs of garlic), saute for another 5 minutes, until golden,

add turmeric, salt and pepper, turn off the heat and put it aside

(or you can make it while the rice is going to be ready)

clean and wash then chop the herbs,

soak one cup lentils at least 30 minutes before cooking, then drain

place 3 cups rice and the uncooked lentils into the pan,

pour 3 cups water, Salt, Pepper, Saffron and cooking oil,

add the grated carrots,

Mix well, then turn on the electric rice cooker (or any kind of pot) on low-medium heat, cook for 15 minutes,

when the water mostly absorbed,

add all the ingredients, gently mix all together,

avoid reaching the ingredients in the bottom of the pan,

dig some deep holes in the rice mixture with a handle of a (wooden) spoon to make sure the water will evaporate !

put the lid on, and let the cooking process continue on low heat,

 rice cooking time totally : around 30-45 mins
