Chickpeas Cookies کلوچه نخود- نان نخودچی

Ingredients:

  • 200 gr chickpeas flour
  • 50 gr powdered sugar (icing sugar)
  • 100 gr butter ghee ( Don’t use unsalted cow milk butter for this recipe),if you are living in America use Shortening (Crisco), if you are living in Iran use Roghan nabati Asil (روغن نباتی اصیل), if you are living in Europe you can use vegetable oil or margarine which is suitable for baking (it would be mentioned on the label of the product).
  • A pinch of saffron (Dissolve the saffron in hot water) or 1 teaspoon cardamom
  • Optional: one egg yolk if you are living in warm weather or in summer time otherwise there is no need!

It would be better if you scale the ingredients, otherwise for my recipes use rice-measuring cup,

Stir Butter ghee and powdered sugar until well mixed,

Sift the chickpeas flour over the mixture,

Mix very well,

Dissolve the saffron in hot water, pour one teaspoon into the mixture,

Time to wash your hands and knead the dough very well for 5-10 minutes until the ingredients very well combined,

 Wrap dough in plastic wrap, let it rest for at least 12 hours (up to 24 or even 48 hours)

(if you have warm weather put it in fridge otherwise rest the dough in room temperature)

after the rest, knead again

spread dough 1 cm thick,

and cut shapes,

or you can roll each piece of dough into a small ball about the sizeof a hazelnut,

decorate by pistachio (Almond or…)

carefully place onto the baking sheet on a oven tray,

Preheat the oven to 325 degrees F = 160 degrees C or Gas mark 3

Bake the cookies for 15 minutes,

don’t touch them until getting cold, then you may remove them

  1. بسیار خوشمزه به نظر میان. یه سوال داشتم ريال روغنی که استفاده کردید بوی خاصی نمی ده، مثل روغن حیوانی های ایران؟ می شه از روغن های جامد گیاهی شیرینی پزی استفاده کرد؟

    • سلام بر شما
      چرا حتما میشه و باید فقط از روغن جامد استفاده کرد
      بوی روغن حیوانی توش نمیمونه یا من اینطور احساس نکردم ممکنه شما حساس باشید نسبت به بوی روغن حیوانی و دوست نداشته باشید
      ولی کره نمیشه، با کره اون انسجام لازم رو پیدا نمیکنه
