Herbed Meat and Rice Balls (Tabrizi meatballs or Koofteh Tabrizi) کوفته تبریزی بدون تخم مرغ

This is My version recipe of “Koofteh Tabrizi” without egg & with uncooked Rice and Chickpeas…

Meatball Ingredients: (you will have 11-12 meatballs)

  • 500 gr Ground meat (calf, lamb or beef) (low fat)
  • A full cup of Rice
  • A full cup of Chickpeas
  • around 100 gr Aromatic Herbs fresh or dry (such as: savory, basil, tarragon, parsley, dill, coriander, leek)
  • 3 large onions (one for meatballs, one for filling and one for sauce)
  • 2 tablespoons tomato paste for the sauce
  • salt, pepper, saffron, turmeric…and some lemon juice (optional)
  • 10-12 prune for the sauce (optional)

Ingredients for Filling:

  • 1-2 tablespoon dried barberries,
  • 1-2 tablespoon raisins,
  • 1-2 tablespoon Walnuts in small batches
  • one onion

A night before, soak the chickpeas in a bowl with plenty of water, change the water 2,3 times

Soak the rice 2 or 3 hours before,

Blend uncooked rice and uncooked chickpeas in a food processor,

add seasoning, one teaspoon turmeric, and the herbs,

I am going to add two tablespoons Italian dried herbs which is so Aromatic

combine well,

blend again all together in a food processor,

You will have a soft mixture,

you may cover it and rest for about 2 hours or overnight in refrigerator, (this part is optional)

for the filling, Peel and chop the onion, then fry them on medium heat in the oil until golden, add half a teaspoon of turmeric, add small batches of walnuts, fry for 2 min, add raisins and fry for less than one minute,

add dried barberries, mix well and turn off the heat ( You can make this before making meatballs and Set this mixture aside then use)

divide them into 11 or 12 parts (according to the number of meatballs)

Make Meatballs the size of Orange

open meatballs one by one and fill with the prepared mixture,

just follow the pictures…

for making the sauce:

Peel and chop the onion, then fry them on medium heat in the oil until golden, add half a teaspoon of turmeric (you may add some diced garlic if you like)

add two tablespoons of tomato paste,

add the boiling hot water ( or add water and Heat the pot until the water starts bubbling),

add the balls one by one,

you may add several prunes to the sauce at this time (this part is optional)

add seasoning, a pinch of saffron and some lemon juice if you like,

cover the pot and boil for One hour over low heat.

    • اگه برنج و نخود خام باشه نباید باز بشه عجبیه چون ما کوفته سبزی رو هم به همین روش درست میکنیم باز نمیشه
