Traditionally Kabab is grilled on skewers over hot coal, this time I am going to cook it in the Oven!
- 500 gr Lamb or lean beef or a combination of the two could be used, which needs meat with some fat on it.
- One Onion
- Salt, pepper and Saffron
To prepare koobideh, one uses minced lamb or beef (precisely 20% fat 80% meat)
blend the meat in food processor
blend the Onion
mix well the blended onion and the ground meat
add Salt, Pepper and Saffron
combine all the ingredients, cover and keep in fridge for 3-4 hours (or over night)
You may divide the ground lamb into equal 4 portions then shape each of them into flat cylinder
Cover the oven plate with aluminium paper, Place the prepared meat on it
Engrave several deep lines on them
Set oven at 200 degrees C or 400 degrees F
Place the plate in the Oven, for about 20 minutes for one side and another 20 minutes for the other side
Serve on a platter with rice (Persian Rice with oil, salt and saffron) accompanied by grilled tomatoes
