Braised kohlrabi, eggplant with lentils Shiraz Style آبگوشت عدس کلم بادمجان شیرازی


2-3 medium kohlrabies (One large Kohlrabi),

2-3 medium eggplants,

one bunch of Basil

500 gr Beef (Lamb),

one Cup of lentils,

one Onion,

one lemon,

vegetable oil, Salt, pepper, Turmeric and Saffron

cut meat into pieces( 10 com),

place meat and the chopped onion into a pan, pour 2 cups of water,

add some turmeric, salt and Pepper

Cook over low-medium heat for about 1 hour,

peel Kohlrabies and slice off the tough woody base, Cut Kohlrabies into 3 cm pieces

Soak lentils 2 hours before and drain

pour hot water over Saffron, it helps release the aroma and color

add the kohlrabies, uncooked lentils and Saffron to the meat, salt and pepper

cover and cook again over low-medium heat around one hour or until the lentils and kohlrabies are done

peel eggplants and cut into planks, put them into a frying pan, add some cooking oil

fry until nicely golden brown on both sides

chop fresh basil leaves

add fried eggplants and chopped basil to the other ingredients in the pan, salt and pepper

Squeeze Lemon Juice on them

add more boiling water if needed, cover again and boil all together just for 10 min

This delicious dish is perfect accompanied with fresh lemon juice, fresh herbs and fresh warm bread!
