Stuffed Grape Leaves Recipe دلمه برگ مو

Ingredients:

  • 300-400 gr Minced ground beef
  • One cup Rice
  • One cup Split pea
  • 2 Bunches of Tarragon (or 3 tablespoons dried Tarragon or you may add other kinds of aromatic green leaves herbs such as parsley, coriander…)
  • One onion
  • 2 lemons (or lime)
  • 3 tablespoons of sugar
  • Some Grape Leaves
  • Salt, Pepper, Turmeric
  • Optional: Cardamom, Cinnamon, Saffron, Sumac powder

finely dice an onion, stir-fry until golden, add one teaspoon Turmeric

you can add one teaspoon of other spices at this time (if you like)

then add ground beef

one lemon juice and salt

Soak the rice 2-3 hours before

add uncooked rice to the meat

split peas need to be soaked overnight,  In separate pot, cook split peas until done,

add peas to meat

Chop tarragon, add into the mixture

combine well

I use Grape Leaf Conserve

Remove the grape leaves from the jar and soak for a few hours in cold water so they are not too salty, or boil several minute in water

lay one leaf on work surface, shiny side down,  cut-off stem end

Take one tablespoon of the mixture and put on the leaf

wrap the leaf (just follow the pictures)

if the leaf is too small you can stack 2 leaves together to make it bigger

add some oil into the pan,

place several leaves on the bottom of the pan

place all the prepared “Dolmeh” into the pan

place several leaves on top

preparing Sugar and lemon syrup mixture to pour over:

dissolve 3 tablespoons Sugar and one (or two) lemon in 2 glasses of  lukewarm water

pour over the pan

place something heavy(a plate) on top to make sure they won’t move,

cook for around one hour over low-medium heat
