Persian Liver and Lung Recipe, Shiraz Style جغول بغول (یا چغور پغور) شیرازی

Ingredients:

Sheep’s liver and lung

2 Onions

salt, pepper, turmeric

Optional: Saffron, Cinnamon, Cardamom

This delicious dish is perfect accompanied with Fresh Lemon juice

Wash liver and lung before cutting

Then Cut them into medium size, put in a pan

add chopped one Onion

a cup of water,

Salt, Pepper and Turmeric

Put the lid on and cook for one hour, over medium-low heat. (Or until done)

cut all into 1cm dice

dice one Onion, put in a Frying pan, add some oil

fry until golden, add some turmeric

add diced liver and lung

Add the remaining liquid mixture and stir just until combined

pour hot water over Saffron, it helps release the aroma and color

pour into  pan

stir to combine,

 cook and stir 5 to 7 min. or until done.

This delicious dish is perfect accompanied with Fresh Lemon juice
