Barbari bread Second Recipe نان بربری با آرد سبوس دار


2 Cups =200 gr Bread Flour (this time I am using  bran flour)

1 Cup lukewarm water

1 teaspoon instant yeast (قاشق مربا خوری)

1/2  teaspoon Salt ( قاشق مربا خوری)

1/2 teaspoon sugar ( قاشق مربا خوری)

1 tablespoon Olive oil or vegetable oil or butter  ( قاشق غذا خوری)

some Sesame Seeds or Black Sesame Seeds

I am going to use the mixture of one egg and one tablespoon of milk as “Romal” !

optional: Poppy Seeds

Note: No Baking Powder, No Baking Soda

I use the medium size of the spoons has shown in the picture, and called teaspoon! (or ghashoghe moraba-khori)

Dissolve half teaspoon sugar in one cup lukewarm water, mixing until the solution is clear

add 2 cups or 400 gr of bread flour into a bowl,

add half of a teaspoon salt

add one teaspoon instant yeast

add one tablespoon olive oil

mix well

pour one cup of lukewarm water (dissolving sugar)

mix very well with a fork, the dough is sticky

Cover the dough and let it rest (in warm area) for 1.5 to 2 Hours, or until doubled in bulk

Put it on a floured surface by using a spoon

sprinkle with a little flour

Divide dough into 2 round pieces

cover again, and let them rest for another 10-15 min

use your hand to make them into elongated shape

Add one tablespoon of milk to an egg, mix well

 lightly Brush doughs with a bit of this mixture

Use your fingertip to make straight parallel deep lines across each portion of dough,

 sprinkle with sesame seeds or poppy seeds

Sprinkle a large baking sheet with sesame seed (black and white), transfer the dough to it

spray water in the oven (method of producing steam)

Set oven to

400 degrees F = 200 degrees C or Gas mark 6

Bake for about 20 minutes or until golden

Butter and Honey would be great on them
