Persian Lentil Rice (second recipe) عدس پلو روش دوم

Ingredients:

1 cup Lentil

1/2 cup walnuts

1/2 cup raisin

One Onion

5-6 Cloves of Garlic

vegetable oil, salt, pepper, turmeric, Saffron and cardamom

3 cups Rice

Meatballs: (optional)

300 gr lean ground lamb or beef,

3  tablespoons flour,

Cinnamon, Turmeric,  Salt, Pepper

note: You may use only lean ground meat as in my first recipe for Persian lentil rice

Soak lentils 2 hours before and drain

put them in saucepan and boil, cook until the grains are soft and just almost done

Add 3-4 tablespoon flour into a pan, put the pan over medium heat, prevent burning the flour by stirring,  fry without oil until the flour change its color to Cream, After getting cold the flour add lean ground lamb or beef (300 gram), turmeric, cinnamon, salt, pepper, mix them well all together, please wash your hands and continue mixing with your hand ( no need to add water or oil), make small balls of meat (1 cm), Place meatballs in the pan add a little oil, spread them out over medium heat and brown on all sides

add  finely diced 1 large onion into a frying pan, fry them all in some vegetable oil, add one teaspoon turmeric

add walnuts small pieces, stir-fry for another 5 mins,

add raisins, stir-fry for 2 mins, turn off the heat,

you may use cardamom as powder or as seed

add 3 cups of rice, 2 cups of water, Saffron, salt, some vegetable oil,  one teaspoon cardamom, one teaspoon Cinnamon, one teaspoon turmeric, half a teaspoon Pepper

put the lid on, turn on the electric rice cooker (or any kind of pot), During the half time of  the Rice cooking process( after 10-15 mins),  until the water is mostly absorbed,

add all ingredients and mix with half-cooked rice,

avoid reaching the ingredients in the bottom of the pan,

dig some deep holes in the rice mixture with a handle of a (wooden) spoon to make sure the water will evaporate !

put the lid on, and let the cooking process continue on low heat,

 rice cooking time totally : around 45-60 mins

This delicious dish is perfect accompanied with Pomegranate paste
