Kohlrabi rice and tiny meatballs Shiraz style کلم پلو شیرازی

Ingredients:

traditionally we use Kohlrabi (German turnip) with its green leaves (but any other kinds of cabbages can be used),

3 medium Kohlrabi,

1 large Onion,

2 bunches Tarragon,

2 bunches Basil,

3 cups of Rice,

meatballs:

300 gr lean ground lamb or beef,

3 tablespoons flour,

Cinnamon, Turmeric,  Salt, Pepper

saffron … lemon or lime juice

Add 3-4 tablespoon flour into a pan, put the pan over medium heat, prevent burning the flour by stirring,  fry without oil until the flour change its color to Cream, After getting cold the flour add lean ground lamb or beef (300 gram), turmeric, cinnamon, salt, pepper, mix them well all together, please wash your hands and continue mixing with your hand ( no need to add water or oil), make small balls of meat (1 cm), Place meatballs in the pan add a little oil, spread them out over medium heat and brown on all sides

add  finely diced 1 large onion into a frying pan, fry them all in some vegetable oil, add one teaspoon turmeric

peel the Kohlrabi and slice into french-fry strips, Add the strips and continue frying,

saute sliced Kohlrabi over medium heat until soft and golden

chop basil and tarragon

add  herbs into the fried Kohlrabi and mix all the ingredients together, fry for 3 min,

add the fried meatballs, gently mix all together, turn off the heat

add 3 cups of rice, 2-3 cups of water(depends on rice), Saffron, salt, some vegetable oil, put the lid on, turn on the electric rice cooker (or any kind of pot),

add all ingredients, gently mix with half-cooked rice, 

avoid reaching the ingredients in the bottom of the pan,

Add lemon juice

dig some deep holes in the rice mixture with a handle of a (wooden) spoon to make sure the water will evaporate !

put the lid on, and let the cooking process continue on low heat,

 rice cooking time totally : around 45-60 mins
