Beef Rice with Pomegranate paste قنبرپلو شیرازی


1- 400 grams meat( beef or lamb)

2- 100-150 gr walnuts

3- 100-150 gr raisin

4-  5 tablespoons pomegranate paste (molasses)

5- 2 Onions

6- 3 cups rice

saffron, turmeric, salt, pepper, vegetable oil

optional: 1 tsp Cumin

dice an onion into small cubes, put them in a pan and fry for 5 min, Add a teaspoon of turmeric powder

cut meat into pieces add into the pan

saute for 5 min, add salt and pepper

pour one cup of hot water, cover and cook  over low heat around 1 hour

dice another onion into small cubes, fry in some vegetable oil, Add a teaspoon of turmeric powder, Stir well,

add Small Walnut Pieces, stir-fry for 3 min

add raisins, stir-fry for 2 min , turn off the heat

add 3 cups of rice, 2 cups of water, saffron, cumin, salt, some vegetable oil

and…1 cup of flavorful liquid made by gently cooking meat

Put the lid on, then turning on the electric rice cooker (or any kind of pot).

after 10-15 min, while most of the water evaporates,

add all the ingredients, pour 5 tablespoon pomegranate paste on top of the rice

avoid reaching the ingredients in the bottom of the pan

 dig some deep holes in the rice mixture with a handle of a (wooden) spoon to make sure the water will evaporate !

put the lid on, and let the cooking process continue for another 30-45 min, over low heat,
