Chicken Fennel Stew (خورشت فنل)

Ingredients:

2-3 Fennel bulbs,

400 gr Boneless Skinless chicken breast ( Lamb or beef),

1 onion,

1 bunch Parsley,

1 bunch Mint(or Dry Mint),

lime or lemon juice,

olive oil (or any kind of cooking oil),

Saffron, Turmeric, Salt and Pepper.

cut fennel bulbs into quarters

put them into a frying pan and fry until golden each side and getting a bit soft

chop parsley and mint together, Add them to the pan

Salt, Pepper, Turmeric and dried mint(optional)

Gently fry diced onion, add turmeric

cut boneless skinless chicken breast the same size of chopped fennel

add them to the frying onion

mix well all ingredients, 2 cups of water, Salt, Pepper, Saffron and of course pour some

LEMON JUICE

Put the lid on the pan and bring to boil, reduce heat and simmer one hour
